Purpose:

Prepares meals according to established and accepted food service practices and procedures

Summary:

Prepare[1] meals for clients of The Harbor Light System and Bed & Bread Trucks

Primary Duties and Responsibilities:

  • Handle and work with food in a clean, efficient, and sanitary manner
  • Train Prep Cooks, Bed and Bread and General Utility workers in the proper utilization of equipment and food preparation as well as cleaning practices
  • Assumes the role of person in charge in the absence of Supervisor and Food Service Administrator with responsibility to lead kitchen staff in compliance with daily standard operating procedures and duties
  • Maintain, monitor, and record food temperatures through complete food handling process
  • Identify, stock, store, and rotate food properly using FIFO system
  • Preparation of menu items in a timely manner
  • Maintain work areas in a clean, sanitary, and well organized manner
  • Must be able to comprehend and execute operating, safety and cleaning instructions of all kitchen equipment
  • Comply with recipes through accurate measurements and making necessary adjustments
  • Provide approved food substitutions based on dietary requirements or allergies
  • Ensure proper utilization, rotation and storage of donated food product
  • Serve meals to clients in a professional and polite manner
  • Take inventory of supplies and food stocks
  • Participate in all special functions and catering events as required

Qualifications:

  • Working knowledge of all kitchen equipment
  • T. B. Test and police clearance required

Education/Experience:

  • Minimum two (2) years-professional kitchen and food production experience
  • Must possess a High School Diploma or equivalent
  • Possess a degree or certification from a Culinary Arts/Hospitality program or equivalent work experience
